- Our sake has been made by making the best use of rice and water and pursuing the original taste of sake from generation to generation, resulting in the slightly dry sake of today. The 12th generation president, Shigeji Murai, has been very particular about the "hint of aroma" that is subtle and elegant on the palate. Recently, "standing aroma," which is immediately apparent when the cork is opened, has become the mainstream, with a tendency for stronger aromas to be favored as good sake. In spite of this recent trend, we continue to brew with a focus on the slightly dry "hint of fragrance" that comes after a short pause.
