Founded in 1874, we have been brewing sake under the trade name "Juichiya" for more than 140 years. As the name "Juichiya" implies, the brewery has continued to produce sake that is neither "1" sweet nor "10" dry, and that is "delicious" without being boring to drink. The area surrounding the brewery is still a spacious rural landscape as it was in the past. In this small brewery in Touizumi, Yaita City, which is blessed with a natural environment, I, the president and toji (chief brewer), have inherited and preserved the best aspects of traditional handmade sake brewing, while at the same time challenging new techniques, such as natural ginjo yeast and flattened rice polishing.
