Founded in 1855, the brewery brews sake slowly and carefully under the motto of "handmade" using subsoil water from the southern foothills of Akagi. The company uses traditional sake bags when pressing the "unrefined" sake. The rough texture of the "sake bag" causes "dregs" to come out, which is said to have a post-ripening effect and give the sake a rounded taste.
