The company was founded in 1723 and has been passed down from generation to generation as a sideline business of the head of the family. Since the Taisho era (1912-1926), the company has been focusing on sake brewing in earnest, and in 1947 won the top prize at the National Sake Competition. The current head of the brewery, Mr. Yoshikazu Iwase, is the 11th generation of the family. About 10 minutes from the brewery is the Oyado Coast, which is named "Moon Desert. The brewery's brewing water passes through the seashell layer of groundwater due to its proximity to the coast, and has a hardness of 13 to 15, which is among the hardest in Japan. High calcium and magnesium content means high nutrient content and vigorous fermentation. By using water with high hardness and brewing using the "Yamahai yeast yeast yeast" method, we can produce sake with a rich, mellow flavor and a strong acidity. In order to bring out the flavor of rice, which is one of the characteristics of Iwanoi's sake, we insist on using the "Yamahai method" of brewing, and more than two-thirds of the total brewing volume is done using the "Yamahai method.
