Nakazawa Sake Brewery was founded in 1825. While making his living as a village headman in the Matsuda area, he devoted himself to sake brewing, using Ashigara rice produced in Kanagawa Prefecture. At the time, the brewery was a purveyor to the Okubo family as an official merchant of the Odawara domain, and when the brewery offered sake to the Okubo family, it received the name "Matsubiyu" from the lord of the domain, Mr. Okubo. The name "Matsu Biyu" is derived from the following two words Matsu" refers to the rows of pine trees along the Sako River that runs next to the brewery. The "beauty" refers to the beautiful scenery of Matsuda-cho and its beautiful sake. The "rooster" represents the shape of a sake jar, and the single character "rooster" means sake. The name has been passed down from generation to generation. Matsumidori is made from carefully selected high quality sake rice and clear underground water from the Tanzawa mountain range. The brewery still insists on making all of its sake by hand, starting with the traditional koji molding process and continuing through the top vatting process. The sake brewing process at Matsumiyu begins with the careful polishing of each carefully selected grain of sake rice. Because we are particular about junmai and nama-shu, we carefully examine the ingredients and brew each sake carefully and carefully over time, with a mindset of "not snobbishness or ostentation" and honesty.
