- Sake brewing starts with rice cultivation..." Founded in 1857, this sake brewery is located in Ebina City, Kanagawa Prefecture. A sake brewery located in Ebina City, Kanagawa Prefecture. The brewery is a "Cultivated Brewery®" that handles everything from rice cultivation, such as Yamada Nishiki, to rice milling and brewing in the local area. The brewery is involved in the cultivation of sake rice in Ebina and neighboring areas, which have been called "Ebina Gochii" since ancient times. We carefully brew sake from rice grown with the full blessings of the sun and the earth. We aim to create a pleasant and intoxicating sake that can be enjoyed over a cup of Izumihashi and a chat among friends. Our concept is "from the rice paddy to the table. Starting with rice cultivation, the sake brewery also offers food pairings at its directly managed restaurant. Symbol Mark Red dragonflies, which are commonly seen in the Kanto region, are born and grow in the rice paddies. By reducing the amount of pesticides used when growing rice, the number of red dragonflies will increase. The red dragonfly is used as the symbol mark of Izumibashi in hopes of creating such a town where many red dragonflies fly around in the autumn sky. 100% Junmai Sake Brewery Most of our products are brewed with sake rice such as "Yamada-Nishiki" grown under contract in an environment where we can see the farmers' faces. All of our products are junmai sake (including junmai ginjo and junmai daiginjo) with no brewing alcohol or other secondary ingredients.
