- Traditions in the present: A sake brewery that brews all of its sake from pure rice. The brewery has been brewing sake since the middle of the Meiji period (1868-1912), and since 2006 has been a pure rice brewery with no brewing alcohol added. By achieving both the flavor and crispness of pure rice, we strive to create sake that complements food, does not get boring to drink, and is easy on the palate.
