Tsunan Town, located in southern Niigata Prefecture, is known for its heavy snowfall and is blessed with abundant, limpid water, selected as one of the "100 best waters" because of the snow that falls on mountains 2,000 meters above sea level, such as Fog Tower. This natural spring water is ultra soft and is said to be "fine-grained, mellow water" and is used as brewing water in the brewery. The brewery was established in 1996 by sake rice farmers, the town, and JA, and was born from the voices of the local community. The brewery uses only "Gohyakumangoku" sake rice grown by local farmers in Tsunan Town.
