The founder worked as a samurai in the Kaga domain's barrier office and brewed sake on the side in 1626, about 400 years after the brewery was founded. Hayashi Sake Brewery is located at the western entrance to Oyashirazu and Shirazu, the starting point of the Northern Alps. The back of the brewery is immediately connected to the Northern Alps by mountains, and in front of the brewery is the jade coast of the Japan Sea, an environment blessed with nature and delicious water. The brewery's brewing philosophy is "to make good sake that tastes even better so that each and every one of our customers can enjoy it.
