- We thought it would be good if we could brew sake in Noto Wajima with local rice, water, and people, and be a locally-oriented sake brewery. We were able to accomplish this with 100 koku. The brewery was completely destroyed in the earthquake. We even considered closing the business, but with everyone's encouragement and support, we decided to build a new brewery. In our pursuit of quality, we have developed a desire for more, and we decided to take this opportunity to resume sake brewing by installing the latest equipment. We are confident in our skills. The brewery is also newly renovated. We are sure that you will enjoy our new sake brewery in Wajima. Please come and taste the sake that I make with the utmost care.
