- Sakuho, a town on a plateau at an elevation of 800 meters above sea level, is located at the foot of the Chikumagawa River in the northern part of Shinshu, at the foot of Mt. The brewery is located at the highest point of the Chikuma River (Shinano River), which is one of the highest elevations in Japan and one of the longest in Japan. The brewery has been making sake in the region for 160 years since its establishment, taking advantage of the high-quality water from the Chikuma River. Yohei Kurosawa, the head brewer, has been serving as the toji (chief brewer) since 2009. He has inherited the solid experience and skills of the former toji and the current technical advisor, Mr. Tadashi Nakazawa, who has devoted 60 years to sake brewing, and with passion and dedication, the entire brewery staff carefully brews sake. All the rice used is grown in Nagano Prefecture. In particular, we are engaged in contract cultivation with ambitious young farmers in the Higashi-Shinano area within a 35 km radius of the brewery, and our own cultivation accounts for 5% of the total amount used. 100% of the rice is milled in-house. We are not simply polishing the rice, but rather we are seeking a well-balanced and pleasant taste of five tastes of sake: sweet, sour, dry, bitter, astringent, and bitter.
