- The main building and two brewery buildings are both from the time of the company's founding (160 years ago), and the climate of Oku-Mino is utilized in the sake brewing process. Because it is a small brewery, the sake is of course made by hand. The tools used are old and outdated, and there is no large-scale equipment. The amount of sake produced at one time is also limited. This is why the yeast that has lived in the brewery for centuries and the traditional skills of the toji and brewers produce sake that is unique to Kinzumi and Heiwananishiki Brewery.
