- Eikun was founded in 1881 in Yui, Shizuoka Prefecture. Eikun was named in honor of the 15th Shogun, Yoshinobu Keiki, who retired to Sunpu in the Meiji era. While many of the breweries were owned by large local landowners, Eikun was actually a branch of a family that did not grow rice and had been buying rice for brewing from the time of its founding. After the third generation was killed in battle, his wife Masako worked hard to protect the brewery, which now produces mainly junmai sake, using only yeast developed in Shizuoka Prefecture and brewed slowly with well water from the brewery's own well. Our goal is to create sake with a natural flavor that does not mislead with its high aroma of sweet, spicy, bitter, and acidic tastes, and a gentle, refreshing aroma. Our ideal sake is not one that does not interfere with food, but one that brings out the best in each other as well as the food.
