- Shizuoka Heiki Brewery is a new sake brewery founded in 2012. In its first year of operation, the brewery produced approximately 100 koku of sake, which is the smallest in Japan. This small amount of sake is carefully brewed using the traditional skills of our toji (master brewer) as well as thorough quality control using modern technology such as air conditioning and thermal tanks.
