- Shutaro Kobayashi, the fourth generation head brewer at Iseya Shoten, is the head brewer. He studied at the National Institute of Brewing and Sake Research, a national institution in Hiroshima Prefecture, and from 2002, he was taught the basics of sake, such as koji making, by the former Tajima toji (Isamu Okada) and others, and has continued to this day. We will continue to make daily efforts to produce our own sake while preserving the traditions established by our predecessors.
