- Since 1998, Moriki Shuzo has been brewing only junmai-shu, a handmade sake brewed with only rice, koji, and water, with no brewing alcohol added. Junmai sake is an honest sake. As a result of our pursuit of what we, the brewers, really want to drink, all the sake we make is junmai sake. Our goal is to create a sake with a moderate aroma that can be enjoyed as a meal accompaniment, sometimes hot, sometimes warmed. We make as much sake as possible because we only produce a small amount of 300 koku.
