- Our brewery has been operating in Kojima, Kurashiki since 1806 (the 3rd year of Bunka era), at the end of the Edo period. The area is known as Kojima, a town of textiles, and is home to many textile factories producing denim, school uniforms, tatami mats, and other fabrics. As the name "Okayama, Land of Sunshine," which has the least amount of rainfall in Japan, the area enjoys a lot of sunshine hours. Although rainfall is scarce, water resources are very abundant, as Okayama has three first-class rivers, which is rare in other places, thanks to the Chugoku Mountains. The rivers also serve to cool the Okayama plateau, making it a very pleasant place to live throughout the year. Our brewery brews sake from the Takahashi River system, one of the first class rivers in Okayama. The rice used is all grown in Kurashiki City, Okayama Prefecture, and is polished to a ratio of 60% or less to produce locally brewed sake with a dry, mellow flavor that will never get old.
