- Okayama Prefecture has flourished as a comfortable place to live and live because of the mild climate of the Seto Inland Sea, where rice cultivation has been practiced since ancient times, and the favorable conditions blessed with the seafood of the Seto Inland Sea and the mountains of the Kibi Kogen Plateau. Sake made in this climate is soft on the palate and has a strong sweetness and umami of rice, which is called "umakuchi" sake. Our sake is well-balanced and crisp, while respecting the traditional "umakuchi" taste of local sake. We brew our sake with the best of Okayama, which is blessed with a rich and limpid brewing water and the traditional skills of the Bicchu Toji, a master sake brewer.
