- Kinmatsu Hishimasamune uses water from the subsoil of the Ota River that comes from the family's traditional diamond-shaped well. Hachitan-Nishiki rice produced in Hiroshima Prefecture is polished and fermented at low temperatures for a long period of time by the master brewer's skillful technique. The sake has a refreshing ginkoku (gin aroma) and a light, refreshing taste, and the traditional flavor that has been preserved is brilliant. The brand name comes from the fact that Hishimasamune was named Kinmatsu and Ginmatsu by Their Imperial Highnesses Prince and Princess Takamatsu on the occasion of the 100th anniversary of the company's founding.
