Umeichi Ueda founded the brewery in Yawatahama City, Ehime Prefecture, in 1916, and it has been 105 years since then. Yawatahama City was called "Osaka of Iyo" during the Meiji period (1868-1912), and commerce using the port flourished. The brewery has been downsized, and the fifth generation of the current president has inherited the skills of the Igata Touji and is now directing the brewery as the head brewer, with a small number of people working to produce quality sake. Ume-Bijin's sake is born from the pure water of Shikoku and the bright, generous, and crisp climate of Iyo-Nanyo. Through our products, we hope to offer our customers the origin of sake and the wonder of brewing culture. Our Touji's Commitment The water used for brewing is from a medium-soft well that is drawn from a vein of water 30 meters underground, where rainfall seeps deep into the earth at the foot of Mt. The brewery and tanks are cooled in a "refrigerated warehouse" and "refrigerated control tanks" for the production of specified name sake, and the sake is fermented at a slow pace to produce a slightly mellow, sweet sake with a ginjo aroma and a full-bodied flavor.
