- All sake is honjozo sake (no added sugar of any kind). All of our sake are honjozo (no sugar added), and even our regular sake has a rice polishing ratio of 58% or less, which meets the requirements for ginjoshu (60% or less). Our signature Toranoo has a higher rice polishing ratio (38%) than regular daiginjos (50% or less). The president, who is also Ehime Prefecture's oldest toji, is particular about the ingredients used, and the Yamadanishiki used for Toranoo is a special grade rice produced in Hyogo Prefecture.
