Minami Sake Brewery is located in Yasuda-cho, Aki-gun, in the eastern part of Kochi Prefecture, and has been brewing sake from the subsoil water of the Yasuda River, a clear stream where natural ayu fish, praised as the best in Japan, run upstream for generations. Named after the brewery, "Minami" is a limited distribution brand of specified name sake with a rice polishing ratio of 60% or higher, which is somewhat unique among Kochi's light and dry omenshu (men's sake), with a gorgeous and robust flavor structure.
