- The brewing water is from an underground spring, famous water from the headwaters of the Shimanto River. We use Yamadanishiki rice and other rice suitable for sake brewing grown naturally by traditional farming methods in the Shimanto River headwaters to produce our sake with the utmost care. In recent years, we have also focused on producing ginjo-shu by our own toji, which has been highly acclaimed, winning a gold medal at the National New Sake Competition and an honorable mention at the Shikoku Seishu Kenpai (Shikoku sake competition).
