- Geographically, Kagoshima is surrounded by the shochu kingdoms of Kagoshima (sweet potato shochu) and Hitoyoshi Kuma (rice shochu), and the climate is just right for sake brewing, but the brewery uses a unique method called "Nanbata-hi-brewing" in which the temperature of the mash is adjusted by adding large amounts of ice. The taste is characterized by the soft sweetness of rice followed by a mellow and deep flavor, and a powerful umami that can be enjoyed with rich dishes. The brewing of sake has been left to migrant toji (master brewers) and seasonal workers, but the fourth generation of brewers, who trained in Tochigi Prefecture and returned to Japan, is now the master brewer, and the entire staff is working together to challenge adversity and overcome severe handicaps to create a sake that will satisfy our customers based on our belief in learning from the past and the new.
