- Our brewery continues to explore the possibilities of "Yumesansui", high quality sake rice grown under contract in Okumikawa, and offers it as sake "Oku". This time, we have focused on the milling characteristics of "Yumesansui" rice. It was said that this sake rice would shatter if the milling ratio was less than 50%, but when the rice was slowly milled in-house with the utmost care, it could be milled cleanly to less than 30%, let alone 40%. However, when we slowly milled the rice by ourselves with the utmost care, we found that the rice could be milled to less than 30%, let alone 40%, and we drew the line at 22%. From this lovely grain of rice, we were given a graceful and elegant sake. The depth of Japanese sake has deepened even further.
