- Made with carefully selected ingredients and the skills of the toji (master brewer) and kurabito (master brewer). Junmai-shu is a higher grade of junmai-shu produced with the utmost attention to detail. What is important is the balance between crisp acidity and umami. Sake brewed with "Gin-no-Yume" is characterized by its refreshing acidity, which is also fully brought out in this product. In addition to the acidity, the rich umami of junmai sake is also valued. Gin-no-Yume" has Yamada-Nishiki as its parent variety, and has inherited the full-bodied flavor characteristic of Yamada-Nishiki. We have maximized this full-bodied flavor to create a junmai sake that is round and soft on the palate.
