In Edo (present-day Tokyo), there is a forgotten yeast called yedo yeast that has been handed down from generation to generation. All Edo" is the result of numerous trials using this yeast. It is brewed with Tokyo rice, Tokyo water, Tokyo yeast, and Tokyo land.
