- Sake rice is made from Yamadanishiki, a top grade rice from Hyogo Prefecture's Special A district, and the rice is carefully and slowly milled in-house to 40% to prevent the temperature of the rice from rising. The unrefined sake is fermented slowly over a long period of time at a low temperature to bring out the delicate flavor of the rice.
