味わいの特徴
Isoamyl Association No. 701 is used to manage the unrefined sake while slowly reducing fermentation to achieve a balance between mild acidity and sweetness. It is characterized by a taste that brings out the full flavor of the rice, yet has a refreshing minerality that does not bore the drinker. The aroma is extremely mild, with a hint of nutty and caramel-like aroma. The moment it enters the mouth, it has an extremely mild taste with sweetness and acidity, and the umami that comes out later is a good representation of the characteristics of Aizu sake. This sake does not require much food to be served with it, and can complement a variety of dishes. Among them, it is a perfect partner for local dishes such as "pickled kipper with Japanese pepper" and "horse sashimi.
