- 味わいの特徴
- Junmai-shu is brewed with yeast grown by the traditional handmade Yamahai method and matured slowly in the brewery. It has a crisp, clean taste that is only possible with Yamahai brewing, and the full flavor of the rice is expressed in the "Dodo" flavor. It is a perfect match for sashimi, sushi, and other seafood dishes, and is favored by many restaurants in Kanazawa. Its robust flavor can be enjoyed either chilled or warmed.
