味わいの特徴
Amasake is made without using any sugar, and its gentle sweetness is brought out by saccharifying the starch in koji mold. The koji, made from highly polished rice using sake brewing techniques, produces a refreshing flavor with no cloying taste. The elegant finish is the result of Hakkaisan's special attention to making good koji. In the Edo period (1603-1867), amazake was popular as a drink to ward off the heat. Please drink it not only warm, but also cool it down.
