- Daiginjo-style brewing is an extension of regular sake brewing" is the idea of the toji, and the sake is carefully brewed using the same methods as for daiginjo. We aim to create the "ultimate evening sake" that will accompany the daily lives of local customers who regularly drink Hatsugame. The specs are dry, but you can enjoy the elegant sweetness of the rice derived from Yamada-Nishiki. Normal sake is the sake in which the brewery's attitude is most evident.
