- Only the "arabashiri," or the sake that comes out of the unrefined mash before pressure is applied, is taken and bottled. It is an unfiltered, unadjusted, unadulterated sake with an aroma that expresses more strongly the lively character unique to new sake. The slightly higher alcohol content gives it a sharpness and a rich volume.

- The flavor and pleasant acidity of the sake can be enjoyed in balance with grilled crabmeat shells or grilled squid.
- It goes well with salty and cheeses with a strong flavor, such as Mondor or Bredemor.
