Niigata University, Morimitsu Village, and Shiokawa Sake Brewery collaborate This project was planned in 2003 as part of Niigata University's support for urban-rural exchange projects (green tourism). The terraced fallow rice paddies have been revived to produce "Ipponshime" rice suitable for sake brewing using traditional methods (hand-planting, hand-harvesting, and hazing).
