Since we call it "Ginjo", we want to make it a "Ginjo-style sake"... This is the reason why we have created this flavor. A Ginjo-esque Ginjo. It is a dry sake with a ginjo aroma and a robust flavor to match. We changed the koji in the 2009 brewing year and the yeast in the 2010 brewing year, and the results led us to the current specifications.
