- The ultimate Hanagaki is our highest grade daiginjo, brewed with all of our brewery's technology for the purpose of entering it in a sake brewing competition. Yamada-Nishiki, the highest grade of sake rice, is polished to 35% and carefully brewed. It is matured at low temperature for 8 months and is released in the fall when it has matured and reached its full maturity and harmony. Because it is a rare product with a small production volume, it bears a serial number as proof of its quality.
