- Inheriting the Bicchu Toji's Ginjo-zukuri style, this sake has an impressive mellow aroma and a clean finish. Nyoiyama" is the name of the mountain behind the brewery. The brewery has been visited by many writers and artists. The name derives from a poem written by the poet Akiko Yosano when she stayed at the brewery in the early Showa period (1926-1989), which she composed while admiring the mountain: "The green waves of the deep mountain trees overlap, the morning of the Kyakubou at the foot of Jyoi. *The Yamada Nishiki production will end in 2022.
