味わいの特徴
A slightly dry junmai ginjo-shu with a very good balance of sharpness and acidity. All carefully selected Omachi rice from Okayama Prefecture is used. No activated carbon is used to preserve the sake's flavor. The bright color of yamabuki, which is the true color of junmai sake, and the slightly acidic flavor make for a sake that goes down the throat well and does not become boring to drink. About the sake name: The Tsuji family, the owners of the Gozenshu brewery, had been running a drapery business under the name "Sumiya" since the Edo period (1603-1868), but Atsuhito Yahei III handed it over to his boss and started a sake brewery in 1804. Since he was the first sake brewer, the Tsuji family calls him the founder of the Gozenshu brewery. We are proud to use the name "Sumiya Yahei" for our sake, so that consumers can better understand the spirit that brought Gozenshu to its current state by respecting the local rice, water, and climate. Distribution is limited to member stores of the Sumiya Yahei no Kai, and will cease in December 2021.
