After the appointment of Maiko Tsuji as toji (chief brewer), the GOZENSHU9(NINE) series was launched in 2008. The regular bottle is a neatly umami-mouth Junmai-shu with a mellow flavor derived from Omachi rice and the characteristic acidity of Bodai-hashiashi that stands out after maturation.
