味わいの特徴
The name "Onikubo" is said to have come from the fact that the area where the warehouse is located used to be a wetland where plovers were seen flying back to their nests in flocks in the red sky at dusk, a beautiful sight. Description Made from soft water from Uwa, Ehime Prefecture, this sake has a soft taste and is suitable for all kinds of fish dishes. It goes well with fish dishes in general. Especially when drunk with sashimi of white fish, its mild taste complements the dish. Shinbashiri is the sake that flows out of the bags due to the weight of the moromi that is put into the bags and stacked in tiers during the sake pressing process. It is generally considered to be fresh, light and refreshing, just like new sake. Chidori Seishu is sake made by placing the mash in bags and stacking the bags during the sake pressing process, then pressurizing the bags to squeeze out the sake. It is characterized by its mild flavor.
