味わいの特徴
This sake is brewed using "Koshitanrei" rice grown in-house and the "Hashira Shochu Shochu Brewing" method, which recreates the sake brewing techniques of the Edo Genroku period (1688-1704). Hashira Shochu Brewing" is a method of enhancing the flavor of sake by adding our own rice shochu, which is a solvent for aroma and flavor. During the Edo period, the use of shochu in the sake brewing process was common from the standpoint of hygiene. This sake was born from the reasoning of our predecessors and the sake brewing romance of combining rice shochu with rice sake.
