味わいの特徴
This Junmai Daiginjo-shu is made from Yamadanishiki, a rice suitable for sake brewing, and grown in our own traditional Akita-style sake brewing process. The mother yeast is a special yeast with a high aroma, cultivated in-house, and grown using a traditional sake yeast yeast. The pressing process is the same as for the sake on display: shizukutori, or "hanging in the bag" pressing. Shizukutori means that the sake is pressed by natural force over 48 hours. Please enjoy this supreme work of Junmai Daiginjo.
