- This Junmai Daiginjo-shu is a blend of sake made from contract-cultivated Yamada-Nishiki rice from the special A district of Hyogo Prefecture polished to 38% and aged in ice temperatures below 0°C for one to two years. It has a wonderful grapefruit-like aroma and a "mellow umakuchi" flavor that is structured, smooth, and deep. It is a classic example of Bon's Junmai Daiginjo-shu.
