Sawanohana Junmaidaiginjo Yuusuzumi
- A summer-only sake released in mid-May. The first impression of the aroma is fresh and mild. Fruits such as apples, pears, and melons are mildly fragrant. The elegant aroma of rice, like kamishinko (a kind of rice flour) and shiratama dumplings, and the lime-like mineral aroma give it a cool, refreshing feeling. The first impression on the palate is faintly gassy, accompanied by a mild sweetness. From the mid-palate, the acidity asserts itself and balances the sweetness, giving a sense of sharpness. There is also a mild umami and bitterness. The overall balance is smooth, and the lingering finish is short and crisp.
