- This year's sake, brewed with the Shizuoka yeast HD-1, is characterized by a ginjo aroma reminiscent of muscat, as was the case last year. The aroma is not cloying and does not interfere with meals. It is not too sweet and has a moderate aroma, which is in line with the design of a ginjo-shu that goes well with meals.
