- Hiyoroshi" is a sake that is fired once, stored during the summer, and sold at the beginning of fall. It is characterized by a mellow and calm sake that has been transformed into a mellow and calm sake. By polishing the rice of Okayama Prefecture's Akihikari rice to 58%, a refreshing aftertaste is created even though it is a junmai ginjo sake in its original form. In addition, by slowly storing the sake in bottles at low temperature for 9 months in its original state, oxidation of the sake is kept to a minimum. You can enjoy the smooth, mellow taste that only matured junmai sake can have. It is a hiyaoroshi of the Bicchu style, which is particular about the rice used and the environment in which it is aged. Kamishin's hiyaoroshi has a particularly strong rice flavor, with a rich, mellow taste and the sweetness of the rice can be felt.
