This sake was brewed from the desire to "drink a dry sake with umami. It is characterized by the umami of rice derived from koji at the top, followed by a lingering spiciness that spreads in the mouth. It is a one-of-a-kind sake that combines the umami of rice with the spiciness of a sake with a sake strength of +14, thanks to the deep flavors of the koji that only Kirakucho can produce.
