What lies beneath the elegant aroma is a superb taste of deep umami and acidity, The deep umami and acidity are woven together to create an exquisite taste. Only the highest grade of Yamada-Nishiki sake rice is grown in Yoshikawa, Hyogo Prefecture. We use only rice from "Yoshikawa, Hyogo Prefecture," where the highest grade of sake rice, Yamada-Nishiki, is produced, and pursue an elegant sake quality through traditional methods and modern ginjo techniques.
