No yeast is added to the sake mother except for yeast, and fermentation proceeds only with the power of natural lactic acid, resulting in a gentle junmai sake with a soft acidity. The alcohol content is adjusted at the moromi (rice malt) stage, giving the sake a light, smooth taste with no alcohol curd, even for a pure sake. Because it is a pure sake, it has a deep flavor. Chill it well and enjoy it in a wine glass. We recommend using a wine glass to enjoy the aroma. Chill "Mizutomai" in a refrigerator, pour it into a glass, and enjoy it as if it were a glass of wine.
