味わいの特徴
This sake is made from only 35% of the center of "Yamada-Nishiki," the king of sake rice, grown by contract farmers in Azumino, where spring water from the Northern Alps flows. It is a clear sake with a silky smooth texture. Please enjoy it in a wine glass. After bottling, we sterilize the sake by heating it in hot water and then cool it quickly, which is a very time-consuming and costly process. This process gives the sake a fresh and fruity taste with a gaseous sensation, despite the fact that it is fire-aged.
